Warm the rice and divide it between 2 bowls.

In a small saucepan or skillet, warm the black beans with the olive oil, cumin, and a pinch of salt for 2 to 3 minutes.

Make the corn salsa by mixing the corn, red onion, cilantro, lime juice, and salt in a bowl.

Mash the avocado with lime juice, red onion, and a pinch of salt to make a quick guacamole.

Cook the Perfecta marbled steaks as per recommended instructions. Let rest 1 minute, then slice into strips.

Build each bowl with rice, black beans, corn salsa, guacamole, and sliced steak. Finish with vegan sour cream and lime wedges.

Ingredients

  • 2 Perfecta marbled steaks

  • 2 cups cooked rice, warm

  • 1 cup canned black beans, drained and rinsed

  • 1 teaspoon olive oil

  • 1/4 teaspoon cumin

  • Salt, to taste

 

Corn salsa

  • 1 cup corn kernels

  • 1/4 cup finely diced red onion

  • 1 tablespoon chopped cilantro

  • 1 tablespoon lime juice

  • Pinch of salt

Quick guacamole

  • 1 ripe avocado

  • 1 tablespoon lime juice

  • 1 tablespoon finely diced red onion

  • Salt, to taste

 

For serving

  • 1/4 cup vegan sour cream

  • Lime wedges

  • Extra cilantro, optional
