Buffalo Chicken Breast Sandwich with Ranch Slaw

Make the ranch slaw. In a medium bowl, toss the cabbage with vegan ranch, lemon juice, and a small pinch of salt. Set aside.

In a small saucepan or microwave-safe bowl, warm the hot sauce, vegan butter, and maple syrup just until the butter melts. Stir well.

Cook the Perfecta chicken breasts as per recommended instructions.

Toss or brush the cooked chicken breasts with the buffalo sauce until coated.

Lightly oil the cut sides of the buns and toast them in a skillet until golden.

Place the buffalo chicken on the bottom buns. Top with ranch slaw and pickle chips. Close the sandwiches and serve hot.

  • 2 Perfecta chicken breasts

  • 2 brioche buns, split

  • 1 tablespoon neutral oil or vegan butter

Buffalo sauce

  • 3 tablespoons hot sauce

  • 2 tablespoons vegan butter

  • 1 teaspoon maple syrup

Ranch slaw

  • 1 1/2 cups shredded cabbage

  • 2 tablespoons vegan ranch dressing

  • 1 teaspoon lemon juice

  • Pinch of salt

 

For serving

  • 4 dill pickle chips
